1 Cup Braggs Apple Cider Vinegar
1 1/4 Cup Distilled Water
3 Tablespoons Kosher Salt
2 Large Cucumbers (peeled and thickly sliced into discs)
6 Medium Garlic Cloves (peeled and sliced in half)
2 Tablespoons Dried Dill
1/2 Teaspoon Ground Black Pepper
1/4 Teaspoon Ground Cayenne Pepper (optional)

1) Boil some water and pour into your mason jar and on the cap in order to sterilize. It’s a good idea to sterilize any other equipment as well like your cutting board or any spoons, etc. that you plan to use. I usually just pour into a bit pot where my equipment can soak for a minute, and turn my jar around if it is not completely submerged. Wash your hands well, too!
2) Add the garlic, dill, and pepper(s) to the jar.
3) Thoroughly wash the cucumbers. Cut out any bad spots and the stem ends. Peel and slice in thick discs. Cram them in the jar leaving about 1/2" - 3/4" of space at the top.
4) Add the salt first, then the vinegar and water. Put the lid on and shake the jar well for a few minutes to make sure all ingredients are diffusing.
5) Let your pickles sit in the refrigerator for at least 1 week before trying them. It is a good idea to shake the jar occasionally to continue to diffuse the ingredients, though they will also do this on their own.

Refrigerator pickles will keep for about 6 months, though I tend to add extra garlic and chopped jalapenos (or extra cayenne) which are all anti-microbial, meaning bacteria does live very well in them so food is preserved longer.
